Masterclasses with Andrew Draper

Andrew Draper, Chef Patron and owner of the inimitable Harvey’s and Harry’s Bar, has started hosting monthly cooking master classes to share some of his wonderful dishes and handy food secrets.

I watched this man in action at the recent House & Garden show and it was inspiring. In just 30 minutes he threw together the most decadent and impressive dishes, doing so in such an effusive and engaging manner that even I managed to absorb something useful. His great sense of humour and happy disposition makes for an entertaining teacher, dispensing of any intimidating or pretentious chef snootiness one would come to expect from a fine dining, slightly avant-garde chef (he doesn’t use words like avant-garde, I do in a weak attempt to pretend I know what I’m talking about).

The first set of master classes kicked off last month and were sold out. So they are back this month. It’s 4 classes, two Mondays and two consecutive Tuesdays. You learn to make about 30 dishes overall (see menu below). Ingredients, water, coffee and juice will be provided, along with recipe cards to take home. There’s a cash bar for wine but feel free to bring your own. The cost is R2800.

Monday, July 14th 2014

  • Greek Mezze Dip Platter
  • Olive Tapenade, Skordalia, tzatziki, smoked brinjal melezanata and taramsalata with courgette crisps and pita bread
  • Homemade spinach and feta spanikopita
  • Greek vegetable and lemon soup with orzo
  • Traditional marinated Cyprian salad
  • My Greek lamb shank kleptiko, made with lemon gremolata
  • Lavender and honey, lemon curd ice cream

Tuesday, 15th July 2014

  • Harvey’s stuffed and deep fried olives
  • Marinated Aubergines wrapped around feta and rocket
  • Pepperdews stuffed with mint cream cheese
  • Roasted red pepper gazpacho
  • Quinoa marinated vegetable salad
  • Seared fresh Norwegian Salmon, with lemon gremolata
  • The Definitive spaghetti Carbonara… my way
  • Creme brulée and caramelised balsamic, peppered strawberries

 

Monday 21st  July 2014

  • Vol aux vents filled with mushroom duxelle
  • Chicken liver pate with apples and brandy
  • Cucumber and nutmeg soup with horseradish cream
  • Twice baked triple cheese soufflés with quick cheese sauce
  • Marinated beef fillet, with Dijon and fresh herbs
  • Deconstructed beef wellington with mushroom duxelle, puff pastry mille fuille and a red wine reduction
  • Crepes, and crepes suzette with crème Chantilly

Tuesday, 22nd  July 2014

  • Avocado salsa bruschetta
  • Fresh Pasta and Gnocchi
  • Fresh pasta roulade with feta and mushroom in sage butter
  • Home Made deep fried Gnocchi with butternut & creamy almond sauce
  • Gnocchi Gorgonzola with roasted nuts and crisp fried sage
  • Slow cooked Tuscan roast Chicken with tomato, panchetta and olive sauce
  • Zabaglione with almond wafers
